Super Easy Cinnamon & Raisin Cookies Recipe


Last week I did some baking with the kids and one of the treats we made were the most delicious cookies I think I've ever tasted. They were so easy to make and the kids loved them, plus I have a top tip to help your cookies get that yummy softness in the centre but still stay crispy around the edges and also get that perfect round shape.


Ingredients
75g (3oz) Flora Buttery
55g (2oz) caster sugar
100g (3oz) soft brown sugar
1 medium egg
1 tsp vanilla essence
100g (3oz) raisins
175g (6oz) self raising flour sieved together with
2 tsp ground cinnamon and
0.5 tsp bicarbonate of soda


Recipe

Pre-heat the oven to 190°C/170°C fan or gas mark 5

Place all the ingredients in a mixing bowl and beat together with a wooden spoon until well mixed.

Brush baking sheets with Flora, take spoons of the mixture roll them into balls and place them on the baking sheets evenly spaced apart. Rolling the mixture into balls is my top tip on how to get the perfect cookie bake and appearance.

Bake on the middle shelf of the oven for 8-10 minutes and cool on a wire tray.

  5. These look fab! When I bake with my kids they usually end up wearing half the mix and eating the other half. Must try harder - I will take your lovely blog as inspiration.
